Share Your Christmas Recipes and Win Big!

I am a huge fan of lemon year-round, but especially during the holidays. I crave a crispy cookie that is light since so many of the treats this time of year are so rich.
These cookies fill the kitchen with that wonderful scent. The rest of the family are huge fans of my lemon cookies, as well, so the cookies don’t last long. They also make a nice treat to share with neighbors and friends.
So if you’re looking for something simple, pretty and lemony sweet but light, try my favorite recipe! I would suggest having plenty of milk around! You’re going to wish you’d made a double batch. They also make a nice, quick gift for a neighbor or friend over the holidays.
And you can always enjoy them when reading my latest book, Cowboy’s Legacy. I suggest curling up with a plateful.
1 cup butter
1½ cups sugar
1 large egg
the zest of two lemons
2¾ cups flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
the zest of two lemons
1 tbsp of lemon juice
Cream the butter and sugar. Add the egg and zest until mixed. Fold in the dry ingredients. Form into balls and roll in granulated sugar. Bake at 350 degrees for 8 to 10 minutes or until the bottoms are lightly browned.
