Chicken Tenders Recipe from Quick and Easy Paleo Comfort Foods

Fried chicken was one of our most popular recipes from Paleo Comfort Foods. Here we make things even faster by using chicken tender strips, and change up the coating by using pork rinds, which add an even more flavorful, crunchier crust!
2 pounds chicken breast, cut into ½-inch strips
2 cups pork rinds
1/4 cup coconut flour
1/2 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon chipotle powder
1/2 cup coconut oil
1. Beat egg in a medium bowl, and place chicken pieces in the egg to soak.
2. Place pork rinds and all seasonings into food processor and pulse until no large pieces remain. Pour this mixture onto a large plate, spreading it out evenly.
3. Using a fork, dip chicken strips in flour mixture one at a time, coating well. Set aside onto another plate.
4. Heat a large skillet over medium-high heat. Add the coconut oil to the pan once hot. Without overcrowding the pan, carefully place strips in oil and fry each side 6 to 8 minutes, or until golden brown. (Cook in batches if your pan is small.) Remove strips to a plate lined with a paper towel or parchment paper to soak up excess oil. Serve hot!
